Zucchini Fritters

Ingredients:
3 Zucchini
8-9 Mint Leaves
2 Cloves Garlic
3 Tablespoons of Plain Flour
100 Grams of Fetta
2 Eggs
Pepper
Method:
Remove the ends of the zucchini and grate them into a bowl. Add the garlic and mint, finely chopped and stir together. Use a paper towel and squeeze the zucchini to remove any excess water. Place the mixture in a frying pan on medium heat for about five minutes to dry it out further. Remove from the heat and set it aside.
Beat the eggs and season with pepper to taste. Crumble the fetta and stir it in, along with the flour. Then add the zucchini mixture and combine thoroughly, adding more flour if the mixture is still not of a thick, dry consistency.
Reheat the frying pan to high and place teaspoons of the mixture in the pan, flattening them into a disc shape. Allow to cook for about 5 minutes or until golden brown, flipping them over half way. This also works really well on a BBQ. Serve hot with salad or on a roll. They can even be warmed up the next day in a microwave as a healthy snack.
