Yummy Rice Stuffed Mushrooms

Ingredients:
6 Field Mushrooms
½ Cup of Red Wine
½ Cup of White Short Grain Rice
1 Sprig of Parsley
1 Tablespoon of Balsamic Vinegar
1 Tablespoon of Mayonnaise
1 Tablespoon of Parmesan Cheese
1 Teaspoon of Paprika
Method:
Soak the mushroom in a shallow dish of wine for ten minutes or so. Meanwhile use a rice cooker to boil the rice. Place the rice in a bowl and add the vinegar, mayonnaise and paprika. Place the mushrooms in an oven proof tray so that the cavity is facing upwards. Stuff the space with the rice mixture until all the mushrooms are filled. Grate a small amount of parmesan cheese and sprinkle it generously across the top of the mushrooms. Place in an oven set to 150 degrees Celsius for ten minutes. Remove and serve warm with salad or bread.
