Wholemeal Pancakes w Pear and Orange Sauce

My Dad has always been the family member in charge of making pancakes. As he always does so intuitively, the measurements shown here are all approximations and will have to be modified to suit your specific taste. When my sister and I were young children we used to believe that sitting a row of troll dolls along the barbeque would make the pancakes turn out better. You may try this if you wish. That also brings me to another point, It may sound strange, but the most efficient way to cook pancakes is on the hot plate surface of a BBQ. You can cook at least three at a time this way, just make sure you clean the surface thoroughly beforehand.
Ingredients:
1 pinch of salt
1 egg
4 tablespoons of sugar
2 cups of wholemeal flour
½ a cup of milk
Sauce:
2 Oranges
2 Pears
2 Tablespoons of Sugar
1 Teaspoon of Corn Flour
Method:
Combine all the pancake ingredients in a blender thoroughly until even. Allow the mixture to sit in the blender for at least half an hour so that it gains a thicken consistency. (NB This is why it is important to plan ahead or you will soon become ravenous while waiting)
Adjust the BBQ plate to a medium setting and allow it to heat up. Next place a large, heaped spoonful of the mixture on the surface and it should spread out to an even thickness in a circular shape. The edges should go slightly golden and solidify, and several bubbles should appear across the surface, this is how you know it is ready to flip. You can try a fancy flip that they do on TV, or not risk the precious pancake and just use a spatula carefully instead. Leave the pancake for approximately the same amount of time then place it in a stack on a plate, checking to ensure each side is properly cooked. Repeat until all the mixture is used up.
Sauce:
In the meantime remove the zest of one orange using a fine grater. Roughly slice the pears into thin slices and extract the juice of the two oranges. Place all this in a small sauce pan and add the sugar and corn flour. Simmer at a low heat for about 10-15 minutes.
Try and time it so that both the sauce and pancakes are ready together so everything is lovely and warm. We also serve pancakes with combinations of cream, honey, lemon juice, strawberries and golden syrup.
Eat outside in the summertime!
