Warm Winter Vegetable Soup

Its that time of year again – Winter! That means snuggling in blankets, rugged up with mugs of hot chocolate and of course vegetable soup. This winter is already shaping up to be a really cold one and I find that a big bowl of vegetable soup does just the trick for fighting off the cold (and flu).
Ingredients:
½ can of tinned tomatoes
2 cloves of garlic
2 carrots
2 sticks of celery
2 potatoes
1 sweet potato
¼ of a pumpkin
1 stick of broccoli
1 parsnip
1 onion
Cheese
Of course, you can vary the ingredients depending on the content of your fridge.
Method:
Fill a large pot with water, add a couple of pinches of salt and bring it to the boil. Chop up all the veggies into medium sized chunks, adding them to the water. Try to put the harder ones in first, like the carrots, potato, sweet potato, pumpkin and parsnips. Next add the celery, broccoli, onion. Also finely chop the garlic and throw that in too. They should begin to soften after about 15 minutes and add the tomato, stirring gently. Simmer for at least another fifteen minutes to allow the flavours to infuse and the mixture to thicken.
Once it is ready you can put the mixture in the blender to make it smooth, though personally I prefer to leave it chunky. To bulk it up you can add pasta or serve with crusty bread. Add grated cheese, salt and pepper to taste. To be shared with loved ones on a winter night.
