Vegetarian Chickpea Patties

A heathful vegetarianalternative to fill your burger. This recipe makes four medium sized patties.
½ Can Chickpeas
1 Handful of Chopped Spinach
1 Clove Garlic
1 Teaspoon of Cajun Spice (Cummin, Paprika, Mustard)
2 Tablespoons of Flour
1 Egg
Crush the garlic and place in a blender along with the chickpeas and spinach. Blend briefly or on a low setting so that the ingredients are roughly combined. Add the cajun spice and flour and pulse the blender a few times. Beat the egg and stir into the chickpea mixture. The mixture should be of a thick, sticky consistancy.
Heat a stove hot plate to high and place a frying pan on top. Use a liberal amount of oil and allow it to heat up until it spits, then spoon out the mixture into cicular shapes of the desired size. Allow to fry, flipping about half way. They should be cooked after about 3 minutes per side.
Remove from heat and drain on absorbant paper. Serve between a burger bun or bread roll. Tastes great with tomato, lettuce, cucumber, beetroot and topped with some sweet chilli sauce.
