The Yummiest Pasta Salad
November 3rd 2006 03:55
You’ll never buy that manky old pasta salad from Woolies or the local fish and chip shop again.
Ingredients:
1 Clove of Garlic
6 Sundried Tomatoes
Juice of ½ a Lemon
5 Tablespoons of Olive Oil
4 Tablespoons of Unflavoured Greek Yoghurt
¼ Cup of Basil
1 Small Bunch of Coriander
8-9 Button Mushrooms
250 Grams of Macaroni
1 Cucumber
¼ Cup of Black Olives
Salt
Pepper
Method:
Fill a large pan with water, add a pinch of salt, set on high and bring to the boil. Add the pasta and allow to cook. Slice up the mushrooms and toss them in too, they don’t take long to cook. Meanwhile roughly chop the garlic, tomato, basil and coriander and put them into a powerful blender. Juice half a lemon and pour into the blender along with the oil. Use the ‘pulse’ or highest setting to blend the ingredients into a rough, thick paste. If you are having trouble, try adding a little more water, yoghurt or oil for lubrication. Strain the macaroni and mushrooms and place in a large bowl or dish. Also roughly slice the cucumber and olives and add. Drizzle the salad with the contents of the blender and toss thoroughly.
Serve as is. Mmmmmm, tasty.

It normally goes cold while you do all the other stuff.
But I guess you could eat it warm if you really wanted to. If you wanted to be a pasta salad rebel.
I'm also personally inclined to think that pasta is for dinner, while pasta salad is for lunch.
