Tempeh Stir Fry

(Serves 2)
Ingredients:
1 packet of Hokkein Noodles
½ bunch Chinese Vegetables
1 Onion
1 small Cucumber
A handful of Snake Beans
1 clove Garlic
1 knob of Ginger
1 Carrot
4 Mushrooms
½ packet Tempeh
½ Sweet Potato
Snow Peas
Sweet Chilli Sauce
Method:
Dice the onion, slice the cucumber and carrot into thin sticks. Thinly slice the mushrooms, sweet potato and chop the beans into 3cm lengths. In a large wok sautee the onion, ginger, carrot and garlic on high until the onion becomes transparent. Add the other vegetables and tempeh. Cook on high for ten minutes. Prepare noodles according to packet directions and add to wok when the vegetables have softened. Add a generous amount of sweet chilli sauce and stir everything together. Serve with chopped coriander as a garnish.
