Tamara’s Tomato Curry

Ingredients:
1 Onion (diced)
1 Can Crushed Tomatoes
1 Tablespoon Curry Paste
½ Cup Eggplant (cubed)
½ Cup Pumpkin (cubed)
1 Handful of Broccoli florets (chopped)
1 Can Chickpeas
3 Tablespoons Coconut Cream
Basmati Rice
Method:
Fry onion in the curry paste until soft. Add the crushed tomatoes, eggplant, pumpkin and the broccoli florets. Bring to the boil with the lid on and simmer for about 20 minutes or until vegetables are soft. Drain the chickpeas and add along with the coconut cream.
Serve with basmati rice.
