Lara MSweet Potato Mash

Why not try this interesting, easy and aromatic variation on the favourite classic, mashed potatoes?
Ingredients:
1 Large Sweet Potato
2 Tablespoons Butter
1 Teaspoon Cinnamon
Method:
Peel then slice the sweet potato into small even pieces and boil in a pot of water until soft. Remove into a large bowl and mash with a fork. Add the butter and cinnamon and continue to mash until a smooth yet thick consistency is achieved. Serve as a side dish to complement a light dinner.
