All that you need to know about Sushi

Sushi is a popular Japanese dish of vinegar-flavoured rice with various fillings or toppings enjoyed all over the world for its simplicity, flavours and presentation.

In ancient Japan, dried fish was placed between two pieces of vinegared rice as a way of making it last. Due to the sticky nature of the vinegared rice, seaweed was added to prevent the rice from sticking to fingers during dining.

In a nutshell, there are five different kinds of sushi preparations and they are: Nigiri (rice topped with wasabi and a fillet of raw or cooked fish/shellfish), Maki (rice and seaweed rolls with fish and/or vegetables), Temaki aka 'hand-roll' (cones of sushi rice, fish and vegetables wrapped in seaweed), Chirashi a bowl or 'bento' of sushi rice topped with a variety of sashimi) and Inari (fried pouches of tofu stuffed with sushi rice).

In recent years, sushi has been a popular meal not only for its taste but because of convenience - especially for those on the go or after a quick bite - and its nutritional value. The main ingredients of sushi, raw fish and vinegared rice, are naturally low in fat and high in protein, carbohydrates, vitamins, and minerals.

It is, in comparison, a healthy alternative to snacking on a meat pie for instance. Sushi has also been popularised by sushi trains - restaurants which serves all types of sushi on a conveyor belt with colour-coded plates denoting the price of each dish.

For those after a good sushi train in Sydney, I would thoroughly recommend the Makoto sushi bar on Liverpool street. This popular venue has a large range of sushi dishes as well as many types of delightful side dishes. The rice is cooked to perfection with just the right amount of vinegar and the seafood is always very fresh. The popularity of Makoto is legendary and every night, a long queue forms onto the footpath outside with a typical waiting period of 20-30 minutes for two at the bar.
