Sundried Tomato and Thyme Tapenade

Ingredients:
100 Grams Semi-Sundried Tomatoes
1 Cup of Pitted Kalamata Olives
2 Sprigs of Thyme
100 Grams of Sliced Almonds
Juice of 1 Lemon
1 Clove of Garlic
Olive Oil



Method:
Place the kalamata olives into a powerful blender or food processor. Roughly chop the garlic, sundried tomatoes and thyme then add them along with the almonds to the blender. Moisten the mixture with olive oil. Juice the lemon and pour this in too. Pulse until the ingredients are combined yet retain texture. Continue to add further olive oil as the blending progresses.

Great as a spread on bread or with crackers.
