Strawberry Tiramisu

Apparently Tiramisu means ‘pick me up’ in Italian. And with 5 shots of fresh espresso going into the mix this should certainly be the case! It is now a very popular dish the world over and always goes down at treat at any special occasion.
Ingredients:
300g Mascarpone Cheese
3 Eggs
1 Packet Savoiardi Biscuits
1 Punnet Strawberries
4 Tablespoons Sugar
5 Shots of Fresh Coffee
Cocoa Powder
Method:
Separate the yolk and whites of the eggs. Whip the whites in a bowl and set aside. Stir 3 tablespoons of sugar with the yolk until a smooth paste is formed. Combine both the egg mixtures and slowly stir in the cheese little by little until a thick cream has formed. Brew the coffee and place in a shallow dish. Dip the biscuits (they only take a couple of seconds to become saturated) into the coffee and layer across the base of a dish until they cover it completely. Next pour over a portion of the cream mixture.
Wash and thinly slice the strawberries and place in a small pan with a tablespoon of sugar and ¼ cup of water. Simmer gently for several minutes until they becomes soft and the liquid thickens. Spoon evenly across the biscuits.
Continue to dip the biscuits in coffee and layer until all the ingredients are use up. Pour the remainder of the cream evenly across the surface and dust with cocoa powder. (Try sifting it- you can see that I haven’t)
Place in the fridge overnight and serve chilled the next day.
