Spinach and Cheese Triangles

Spinach and Cheese Traingles (Serves 4)
Essentially, these are not really spinach and cheese triangles, they’re a lot more like spinach and cheese diamonds. This is a personal innovation. You see, when it’s a triangle shape all the cheese seeps out and leaves the pastry empty. A diamond shape holds the filling far more effectively.
Ingredients:
1 small bunch of spinach
1 handful of grated parmesan cheese
150 grams of ricotta cheese
1 sheet of puff pastry

Method:
Wash the spinach and roughly chop it into sections about 3cm long, including the stem. Place in a pan of water with a pinch of salt and boil until the spinach is limp but still retains a sweet flavour. Drain in a colander and either squeeze the excess water out of the spinach or leave it on paper and let it soak up.
Cut the sheet of puff pastry into square quarters and fill the centre of each square with chunks of ricotta and spinach and a sprinkling of parmesan. Then fold each corner into the centre and pinch each edge closed. Poke the top with a fork a couple of times. Place in an oven preheated to 180 degrees Celsius. Allow to cook for 10 minutes or until golden brown. Enjoy!
