Salmon in Butter on Creamy Mash

Ingredients:
2 Salmon Fillets
6-7 Potatoes
Butter
Thyme
6 Tablespoons Pure Cream
1 Bunch Asparagus
3 Stalks Spring Onions
1 Piece of Garlic

Method: (Serves 2)
Peel several medium sized potatoes and then place in a pot of boiling water until soft. Remove and place in a large bowl with a knob of butter and the cream. Mash until smooth, adding more cream if necessary. Place a generous serving on each plate and set aside.


Meanwhile wash and remove the bones of the salmon. Rub salt and pepper into each side of the flesh and fry lightly in the pan until succulent. Place The salmon on top of the mash.
Remove the last three centimetres of the asparagus and fry very lightly, no more than two minutes and place next to the salmon.

Finally, heat a knob of butter in a small sauce pan. Add a teaspoon of thyme, one piece of chopped garlic and the spring onion, roughly chopped. Simmer for 1-2 minutes and then drizzle over the salmon.
Serve and enjoy!
