Pistachio and Halumi Salad

Ingredients:
100 Grams mixed salad leaves
½ Cup shelled pistachios
200 Grams of Halumi cheese
¼ Cup of kalamata olives
4-5 Mint leaves
Lemon
Good quality olive oil
Method:
Finely chop the mint and wash along with the salad leaves, place in a bowl. Cut the halulmi into slices and lightly fry in a pan until golden brown. Crumble into the salad. Add the olives and pistachios. Squeeze half a teaspoon of lemon juice into the bowl and add a splash of oil. Toss and serve as a side or light lunch.

That one's going into my recipe folder for sure.
I can see all the turned up noses amongst the meatie heads, but when you start talking haloumi and olives, you have this food loving veggo's undivided attention.
