The bold, glossy pictures throughout the Muffin Bible will have you drooling in no time.
Some of the savoury muffins look spectacular and the choc chip muffin featured on the front cover is absolutely mouth watering...
The trouble I always have with muffins is they always end up too dense or dry. To me, the perfect muffin is light and fluffy. Thus I was delighted to find the very first page addressed to my particular problem. Apparently the secret is to mix only as much as absolutely necessary. Just enough to combine the ingredients- and then stop. Over mixing is a major cause of dry muffins. And of course using white flour will improve fluffiness.
Armed with this knowledge, I’m keen to combat all the crappy disappointing muffins caffeterias across Australia are plagued with.
With 170 recipes in the Muffin Bible I’m spoilt for choice. They all look so very, very good! In particular I’m keen on the spiced lemon muffins, the black bottomed muffins and the apple muffin with maple glaze.
