Monte Carlos Recipe

I made these to cheer up my sick little sister in hospital. Even though she had been eating very little for the past few days, she managed to get through a whole one of these!
Ingredients:
100 Grams of Butter
2 Cups of Self Raising Flour
¾ Cup of Plain Flour
½ Cup of White Sugar
1 Egg
2 Teaspoons of Vanilla
Cream:
Raspberry Jam
1 Teaspoon of Vanilla
50 Grams of Butter
¾ Cup of Icing Sugar
1 Tablespoon of Milk
Method:
Cream the butter and sugar together with an electric mixer. Add the vanilla and egg and continue to beat. Add the flour and beat until the mixture has achieved an even consistency. Grease a tray and preheat the oven to 180 degrees Celsius. Take small balls of the mixture and press them into flat circular shapes onto the tray. Bake for ten minutes or so and then remove from the heat. Allow to cool for at least ten minutes so that they may harden.
Meanwhile beat the butter and sugar for the filling together, and add the vanilla and milk as it becomes soft and light. Smear a tablespoon of the mixture onto one side of a biscuit. Do the same with the jam on another biscuit and sandwich the two together. Continue until all the biscuits are paired. Enjoy!
