Mint Mini Quiche Recipe

Mint Mini Quiche (Makes two)
These are great as a filling snack and have a lovely, light refreshing flavour thanks to the mint leaves. They could also be made even smaller as hor’deurves for a party, though remember they would then have a greatly reduced cooking time.
Ingredients:
1 Handful Grated Tasty Cheese
5 Mint Leaves
˝ Sheet Puff Pastry
1 Egg
2 Tablespoons of Milk
Method:
Whisk the egg with the milk in a bowl. Tear the mint leaves into smaller pieces and add with the grated cheese into the egg and milk. Stir the mixture. Lightly grease two depressions in a muffin tray. Cut the ˝ a puff pastry sheet in half again so that it forms two small squares. Gently push the squares into the muffin depressions and fold the pastry edges so they line the hole. Spoon the mixture into the pockets so the pastry is a about half full. Place in the oven on a low heat and cook for 15 minutes or until the pastry is a golden brown and the mixture has risen and is solid. This can be tested by poking it with a fork. Remove from the oven and allow to cool.
