This is a delicious sardine and vegetable stir fry which is great for lunch or dinner. The chilli, garlic and ginger make it an excellent cleansing for the body too.
Ingredients:
Two minute noodles
2 eggs
1 knob of ginger
1 onion
3 cloves garlic
1 chilli
Soy sauce
Sweet chilli sauce
½ Capsicum
1 Carrot
1/2 Eggplant
1 Zucchini
1 Tin sardines
Method:
Fry the eggs in a pan or wok on high with a dash of soy sauce into a rough omelette shape and set aside. Chop the garlic, chilli and ginger finely and fry with the onions roughly chopped until brown. Slice the rest of the vegetables thinly and add them to the wok, frying with more soy sauce and sweet chilli sauce. Put a lid on so that the mixture partially steams as it fries. Keep on the heat until the vegetables are cooked, though still firm. Boil the two minute noodles in a pot of water until soft (this inevitably takes more than two minutes). Add the noodles and fry for five more minutes. Serve immediately while still warm.
