Mayonnaise Salad

Ingredients:
7 Large Lettuce Leaves
1 Carrot
5 Artichoke Hearts
2 Dozen Green Olives
3 Tablespoons of Mayonnaise
½ Capsicum
1 Lebanese Cucumber
7 Sundried Tomatoes
2 Tablespoons of Pine Nuts
Salad Herbs



Method:

Wash the lettuce leaves and display along the bottom of the serving bowl. Grate the carrot and finely slice the cucumber, sundried tomato, capsicum and artichoke. Add the olives, mayonnaise and half the pine nuts. Toss thoroughly. Sprinkle the remaining pine nuts on top and add salad herbs to taste. Perfect to compliment a heavy meal, or as a simple snack with bread.
