Make Your Own Fresh Guacamole Dip

Guacamole is a staple at any good BBQ or partynowadays.
According to Vege Paradise, guacamole possibly originated in pre-Columbian South America. As outlined in the previous post, avocados proved very popular among South America’s early residents including the Ancient Aztecs and Peruvians.
The Aztec ahuaca-mulli, avocado sauce, was prepared by mashing avocados and sometimes adding tomatoes and onions and, perhaps, coriander. This is believed to be the earliest incarnation of our beloved guacamole.
“Now why would I bother making my own when I can buy some from the supermarket for $3.50?” I hear you ask.
BECAUSE the guacamole that you buy from the supermarket is disgusting, full of preservatives and tastes like crap. Believe me, it is well worth the extra time and effort making your own. I wouldn’t even bother eating the store bought stuff. Fresh guacamole served at a party is remarkably quick and easy to make and will make you popular amongst your friends.
Ingredients:
Two ripe Avocados
300 grams of sour cream
Half a tomato
1 tablespoon of paprika
3 sprigs of spring onion
1 tablespoon of lemon juice
1 Chilli (optional)
Method: Finely chop the tomato, spring onions and chilli, if you dare. Remove the avocado skin and stone, and combine all ingredients in a medium sized bowl. Obviously you can adjust the measurements to suit your tastes. Now for the fun part, mashing! Mash all the ingredients together with a large fork or specially designed mashing implement until delightfully lumpy, yet consistently so. If you cover this with plastic, the lemon juice should keep it lovely and green for a while, but it is still best served soon after preparation.
Great for plain corn chips, nachos, burritos and anything that you want to bring a Mexican flavour to.

it's still damn good without sour cream, you just have to make sure that the avocados are ripe!
