Lemon Spinach Pie Recipe

Ingredients:
2 Sheets puff pastry
½ a Chilli (see: http://www.foodherald.com/chilli-history-and-facts/ )
1 Cup of grated cheese
1 Egg
1 Tablespoon of lemon juice
1 Clove garlic
1 Bunch of spinach leaves.
Method:
Boil the spinach in a small pan of water until limp. Strain and squeeze out any excess water, then roughly chop. Place in a bowl with the egg, cheese and lemon juice. Finely slice the garlic and chilli and add these to the bowl, combining the mixture. Lightly grease a dish and lay a sheet of puff pastry so that it covers the bottom and sides of the dish. For this you may need to use two overlapping sheets, depending on their size.
Next spoon the layer evenly into the dish. Take a final sheet of puff pastry and place it across the top of the dish so that the mixture is hidden from view. Use a fork to poke several holes in the top layer of pastry to allow air and heat to escape. Place the pie into an oven preheated at 180 degrees Celcius. Allow to cook for twenty minutes or until the pastry rises and becomes golden brown. Remove from the oven and allow to cool. Slice up and enjoy!
