Recipe: Lemon Linguini Pasta (Serves 4)

Ingredients:
1 packet of Linguini pasta
The zest of 1 lemon
the juice of 1 lemon
1 Clove garlic
¼ cup pure cream
¼ sour cream
¼ cup grated parmesan cheese
4 leaves English spinach
Salt
Pepper
Method:
Cook a packet of pasta al dente, ie. Don’t allow it to become too soft. Grate the zest form the lemon and finely chop the garlic. Fry the zest of the lemon and garlic in a sauce pan until brown. Add the pure cream and sour cream and the lemon juice and stir. Bring to the boil and simmer for three minutes. Stir in the grated cheese and season with salt and pepper to taste. Add the pasta to the sauce pan and stir. Garnish with fresh spinach. Top with more parmesan.
