Kumara (Sweet Potato) Chips

These are a very tasty, moreish that can be served as an appetizer or side dish.

Method:
Wash and peel a sweet potato. Place a frying pan on the stove top on high and fill with 1cm of cooking oil. Using a potato peeler, peel large, thick slivers off the sweet potato until none remains. Exercising care, place a few slivers at a time into the the oil and lightly fry for a few minutes. Ensure that the sweet potato is cooked enough to become crispy when cooled. Remove from the pan and place on a sieve of some sort to allow to drain. Continue until all the sweet potato is cooked. Place on an absorbent paper towel to drain further. Serve as desired.
