Kalamata Olive Tapenade Recipe

October 5th 2006 08:29

This is really yummy and often requested for gatherings. The flakes of almond perfectly compliment the strong flavour of the kalamata olives.

Ingredients:
1 Cup of Kalamata Olives
1 Small Handful of Parsley
40 Grams of Slivered Almonds
1 Clove of Garlic
Olive Oil
1/2 Lemon

Method:

Throw the kalamata olives into a powerful blender or food processor. Roughly chop the parsley and garlic then add them along with the almonds to the blender. Moisten with a dash of the liquid that the olives were stored in and some olive oil. Juice half a lemon and pour this in too. Pulse until the ingredients are combined yet retain texture. Add further olive oil if necessary to assist the blending.
Serve with pita bread, crackers or stir through pasta.
