Jacqui’s Walnut, Apple and Zucchini Muffins

Ingredients:
2 Cups Wholemeal Self Raising Flour
¾ Cup Walnuts
3 Eggs
1 Cup Raw Sugar
½ Cup Olive Oil
1 Cup Grated Carrot
½ Cup Grated Apple
1 Cup Grated Zucchini
1 Tsp Bicarbonate of Soda
¼ Tsp Salt
1 Tsp Ground Cinnamon
1 Tsp Nutmeg
Method:
Preheat your oven to 180 degrees Celsius. Stir the sugar, walnuts, nutmeg, cinnamon, flour, salt and bicarb together in a large bowl. Squeeze out the apple, carrot and zucchini and add to the bowl. Beat the eggs together with the oil in a smaller bowl and then add to the large bowl. Stir well until all ingredients are combined, forming a thick mixture. Take a muffin tin and grease. Spoon in the mixture, allowing room for it to rise. Bake in the oven for 45 minutes or test with a skewer. Remove from the tin and serve warm.
