How to cook - Poached Egg

Poaching an egg might sound simple. All it takes is cracking a fresh egg into a pan of simmering water and letting it cook until the egg white has mostly congealed while the yolk remains soft.
It sounds easy - and it is - but to do it well requires some trade secrets and who better than Michelin-starred chef Gordon Ramsay to show us how to make a f**king good poached egg.
The celebrity chef uses the 'vortex' method of preventing dispersion of the egg whites so get a whisk and gain some momentum in the water. By dropping the egg in the direction of the spinning water, what this does is it causes the egg whites to wrap around the yolk so it forms like a mozzarella ball.
Ramsay recommends cracking an egg in a tea cup or espresso cup beforehand so it makes it much easier dropping the egg into the water. The secret behind a good poached egg is taking it out of the water and putting it in ice water to cool down and stops it from overcooking.
