Half An Hour Steamed Pud

The name is slightly misleading, as this usually takes a good 45 minutes. Nevertheless it is more appetising than its alternate name, ‘spotted dick’.


Ingredients:
60g Butter
4 Tablespoons Sugar
1 Egg
1 Cup of Self Raising Flour
3 Tablespoons of Milk
3 Tablespoons of Marmalade

½ Cup Dates


Method:
Cream the butter and sugar together in a wide bowl with an electric beater. When combined beat in the egg, then thoroughly mix with the milk, flour. Roughly chop the dates and then stir them in too. Place in a well greased basin over the marmalade. Jam can be used as a substitute if necessary.


Cover the basin with aluminium foil and steam over a pot of boiling water for 45 minutes. Check the pudding regularly to ensure that it does not dry out. It should be ready when you can poke it with a skewer and it comes out clean, like with a cake. Serve with thickened cream and golden syrup.
