Gourmet Porridge (Oatmeal)

I believe porridge is a heavily underrated breakfast food. Look, goldilocks had to be on to something or she wouldn’t have taken such big risks for a delicious steaming bowl of porridge. This is a great start to the day if you have a little extra time than usual and don’t think you’ll get another chance to eat for a while. Porrige is very filling and will keep you going all morning. It’s also great for winter because it warms your insides right up.
Ingredients:
250 grams of Quick Oats (usually partially crushed and smaller than normal oats)
200 grams of Milk
125 grams of Sultanas
3 Tablespoons of Coconut
3 drops of Vanilla essence
Cinnamon
Honey/Maple syrup
Method:
Pour the oats into a small pan on the stove top and set it to medium heat. Add the milk, coconut and sultanas. The sultanas will absorb the milk and become full and juicy. Stir gently until the mixture begins to bubble. Continue to stir as anything left in the bottom of the pan can burn. Add more milk if the mixture becomes too thick. Add the vanilla essence and stir this in, waiting until most of the milk has evaporated and the mixture should have a thick, even texture. This should take less than ten minutes. Scoop out the mixture into a bowl and bathe it in some more milk, as you would with breakfast cereal. Sprinkle with cinnamon and drizzle with honey or golden syrup. Enjoy.
