Avocado and Asparagus Salad

Ingredients:
½ Lemon
1 Bunch of Asparagus
Avocado
Kalamata Olives
Pine Nuts
1 Tablespoon Sundried Tomato Oil
Mixed Leaves
(Usually includes:
Lettuce
Baby Spinach
Rocket)
Method:
Wash and cut the asparagus into three centre metre long lengths. Fry in a frying pan for only one minute, so that they remain firm but sweet. Toss into the mixed salad leaves along with the olives. Scatter pine nuts across the top and place slices of avocado arranged around the sides. Juice half a lemon and place it in a jar with 1 tablespoon of the oil that sun dried tomatoes come in. Shake vigorously and slather the dressing across the salad liberally.
