Creamy Cheesey Potato Salad

Ingredients:
5 Tablespoons Sour Cream
5 Tablespoons Cottage Cheese
10 Grams Fetta Cheese
3-4 Shallots
7-8 Chat Potatoes
3 Sticks Celery
5 Eggs



Method:
Chop the potato into even sized pieces and boil for a short time, till the potato is only just cooked, but still very firm. Hard boil the eggs and set aside to cool. Drain and place in a bowl with chopped shallots and celery. Peel the shell off the eggs and carefully slice each one into about 4 pieces, adding to the bowl. Add the cream and cottage cheese and stir. Crumble fetta cheese over the top and sprinkle some more shallots as garnish. This is a very filling dish so it is suitable for lunches, picnics or as a small side to dinner.
