Country Pikelets

Ingredients:
1 Cup of Plain Flour
1 Teaspoon of Vanilla Essence
1 Pinch of Salt
1 Teaspoon of Baking Powder
2 Tablespoons of Castor Sugar
1 Egg
1 Cup of Milk
Sauce
10 Washed Strawberries
1 Tablespoon of Sugar
2 Tablespoons of Water
Method:
Mix all of the pikelet ingredients thoroughly in a large bowl. Place a frying pan on medium heat and use a dessert spoon to measure out the mixture into the pan. Allow the pikelets to spread but you can usually fit about three in at a time, depending on the size of the pan. Cook for approximately 2-3 minutes or until several bubbles form on the surface and then flip, allowing the other side to cook for approximately the same amount of time. The pikelets are cooked when they become a golden brown colour. Set on a plate and continue in the pan until all the mixture is expended.
To make the sauce place all the ingredients in a small pan or pot on a medium heat and cook for only two minutes until a thick red liquid forms around the strawberries.
Drizzle the pikelets with all the sauce and add honey as well if you wish. Serves two.
