Why cauliflower is one of the healthiest veggies

Who remembers those dreaded three words mum used to say at the dinner table? Mine still does!

"Eat your VEGETABLES!".

Cringe.

To this day, I'm still not very fond of greens - I'm a carnivore through and through and nothing beats a succulent medium-rare wagyu beef steak. However, I still eat my vegetables because I am well aware that many of them reduces the risk of disease, improve overall health and that my body likes them.

One such vegetable is the cauliflower, a member of the cruciferous family and has no fat, is high in vitamin C, vitamin K, folate, and potassium. It is a source high in dietary fibre and contains nutrients that fight against several diseases and even cancer, making it one of the healthiest vegetables you can eat.

There are three main ingredients in cauliflower that gives it its fighting properties against diseases and cancer. Indole-3-carbinol (13C), the photonutrient sulforaphane and phenethyl-ITC are readily found in cauliflower and it is these phytochemicals that retards the formation of blood vessels that feed certain types of cancer lesions while sulforaphane helps prevent tumours before they form by sweeping out harmful toxins in our bodies.

Eating raw cauliflower in salads provides the best nutritional benefits and they can also be lightly steamed, used in soups and stews. For those that keep a strong eye on their intake of carbs, mashed cauliflower is a great substitute for mashed potatoes.

you've had wagyu? i have always wanted to try it!

i have developed an addiction to jamon though!

oh, i actually quite like cauliflower too. hehehe.
