Borlotti Bean Bruschetta

Ingredients:
Half a Bunch of Parsley
1 Can of Borlotti Beans (drained)
1 Small Red Onion
1 Clove of Garlic
1 French Baguette
½ Cup Kalamata Olives (Marinated Olives can be substituted)
Olive Oil
Red Wine Vinegar
Salt
Method:
Using a fork lightly mash the beans in a bowl. Dice the red onion finely and add to the beans. Stir in the kalamata olives and the chopped parsley. Crush the garlic and stir into the mixture. Add olive oil and vinegar to taste. Season with salt and pepper.
Evenly slice the baguette on an angle and brush one side with olive oil. Place in the oven under the grill and cook until golden brown. Turn the baguette slices over and brush with olive oil. Grill again until golden brown. Thickly spread with the bean mixture and serve.
Hot Tip! Try using other types of beans or chickpeas instead of borlotti for a different flavour. To further vary the recipe try substituting the parsley with basil or thyme.
