Black Sticky Rice Pudding

This is in some ways similar to the European rice pudding, using black sticky rice and popular in Asia. The more subtle flavour of the pudding complements the fluid texture is a delight to be eaten warm on a cold day.

Ingredients:
½ Cup Black Sticky Rice
3 Cups of Water
½ Cup of Coconut Cream
½ Cup of Coconut Milk
80 Grams of Raw Sugar

It looks a bit gross...but tastes good!


Method:
Boil the rice in a pot of water and simmer for about half and hour. Test the rice to see if it is cooked, it should become soft. Once it is the mixture should be much thicker. Add the milk, sugar and cream and simmer for another four minutes. Serve warm in a bowl with a liberal amount of coconut cream drizzled on top.
