Ingredients:
1 cm Ginger
2 Garlic Cloves
1 Sliced Onion
200 Grams Hokkien Noodles
2 Kaffir Lime Leaves
540 Ml Coconut Cream
600 Grams Marinara Mix
˝ a Lemon
1 Small Bunch of Coriander
Sesame Oil
Method:
Fill a pot with about 15 cm of water and place on high. Finely chop the ginger and garlic, and slice the onion. Add to the pot and allow to cook and infuse. Meanwhile bring a full pot of water to the boil and add the Hokkien noodles. Boil for 5 minutes or until the noodles are soft then drain them and set aside. Take the first pot down to a medium heat and add the coconut cream, lime leaves and marinara mix. Cook for another 5-10 minutes or until the seafood is cooked.
To serve fill a bowl with the noodles and pour the soup over the top. Wash and finely chop the coriander. Sprinkle liberally over the surface as a garnish. Juice half a lemon and add a dash of the juice. Add sesame oil to taste.
