ANZAC Biscuits

In the spirit of the day, here is a really great recipe for ANZAC cookies.
1 Cup Rolled Oats
1 Cup Plain Flour
2 Teaspoons Bicarbonate of Soda
1 Pinch Salt
2 Dashes Nutmeg
1 Teaspoon Ginger Powder
1 Tablespoon Golden Syrup
125 Grams Butter
1 Cup Castor Sugar
2 Tablespoons Boiling Water
½ Cup Desiccated Coconut
Mix together the dry ingredients in a large bowl, ie. The coconut, flour, sugar, nutmeg, ginger, oats and salt. Place a small saucepan over a low heat and gently melt together the butter and golden syrup. Mix the bicarbonate of soda and water in a small bowl and then slowly pour and stir into the saucepan. Remove from heat and mix well with the dry ingredients. Grease a baking tray and preheat the oven to 180 degrees Celsius. Shape small balls of the mixture and place on the baking tray, leaving plenty of space in between as they spread quite a lot. Place in the oven for only 10 minutes or until golden brown. Remove from the oven and allow to cool for at least 15 minutes before attempting to remove from tray. Goes nicely with tea!
