Rice paper is a staple in Vietnamese cuisine – the foundation of the popular rice paper rolls or Summer rolls, which are often eaten as snacks throughout the day in Vietnam. These days, it’s a familiar sight in many cafes and restaurants around the world, as an appetizer or a snack. It’s light and refreshing, making it a favourite with many.

The main ingredients of rice paper are rice flour, tapioca flour, salt and water. It’s usually sold dried in thin, translucent round or square sheets that are crisp to the touch.

Handle gently, as you remove it from the packet to place in the warm water. Follow the instructions on the packet on how to soften the sheets. I suggest only soaking a sheet at a time – tedious I know, but at least the entire sheet is *cooked*. From experience, cooking more than a sheet at a time resulted in some sheets *uncooked* in certain nooks and crannies – rather annoying.

Rice paper is sold in most Asian supermarkets.

This is my *favourite* brand of rice paper. Having tried a few other brands, this brand's texture and *handle-ability* is tops with me.

*Eat, drink & be merry*
